Omar Vicente Guadarrama
Omar V. Guadarrama Fuentes is a PhD Student in the Sustainability program offered by the UPC, holds a MS in Food Identity (ESA, France), and has a background in gastronomy (UAEM, Mexico). He has worked in the characterization of traditional food and the analysis of production chains in food quality schemes. Currently, he is working on value chain analysis, sustainability, and governance of Geographical Indications systems. His research interests include culinary heritage, foods systems, enhancement of traditional and local food, and local development.
